These apple butter muffins came about in the following way. I was working on the Birkat Chaverim pinterest boards. Lately we have had a large growth of followers on Pinterest and I like to see what followers are interested in. One of our fans had pinned an apple butter pin. Apple butter was new to me, but it sounded like something my kids would like (they love applesauce) and that would be fun to make, over vacation. I bought about 2 kilos of apples, and my daughter helped me to set it up in our crockpot.
I based what we made on a variation of lifeasastrawberry’s apple butter recipe . This recipe is intended for the stovetop and uses maple syrup and cloves. Because Rosh Hashanah was coming, I wanted to use honey, and I couldn’t find the cloves so we used nutmeg instead. Additionally, we doubled the recipe.
However, the apple butter was too sweet for my kids. So we decided to use it for apple butter muffins. Which we really really loved. We’ve already made them twice and are planning on making more for Rosh Hashanah. I wrapped them in our Rosh Hashanah digital cupcake wrappers. They would also be great in the digital sukkot cupcake wrappers.
Apple Butter Muffins Recipe
2 cups of flour
1/2 tsp salt
2 tablespoons baking soda
half teaspoon molasses
half cup sugar (or skip molasses and use brown sugar)
2 tsp cinnamon
1/4 tsp of nutmeg
2/3 cup of apple butter (or more, to taste)
1 tsp vanilla
2 eggs
1 cup oil
1/2 cup water
Mix together and pour into cupcake tins or cake tins, as desired (we did 8 muffins and an English tin). Add the topping below, if desired.
Apple Butter Muffins Topping
1/2 cup sugar (or skip molasses and use brown sugar)
1/4 tsp molasses
handful of your favorite slivered or crumbled nuts
1/4 cup of flour
Mix ingredients together making sure nuts are small. Sprinkle on top.
Bake and enjoy. These are based on a recipe by Tastes of Lizzy T, which are fancier and more of a filled type of muffin. I was looking for more of a coffee cake type of thing, only apple butter flavored. The apple butter is not a strong flavor in the muffins, but the muffins are yummy and forgiving of variation.
